In a pot of boiling salted water, add the rice. Stir and boil for 20-25 minutes until cooked al dente. Drain and cool under running water.

Wash the apples well and cut them (with the skin on) into small cubes. Put the apples in a salad bowl and sprinkle with the lime. Grate the radishes and carrots and add them to the salad bowl. Add the celery, parsley, raisins, almonds and cold rice. Season with salt and pepper and mix well.

In a small bowl, whisk together the olive oil, apple cider vinegar and honey with a fork. Drizzle over the salad and toss. Place the cottage cheese on top of the salad and serve.
